Fresh Zucchini, Carrot Zoodletti Recipe
Hey my loves, today I am bringing you my delicious, Fresh Zucchini, Carrot Zoodletti Recipe. This dish is full of flavour and colour, packed with vitamins and nutrients! I love this dish as it is a great substitute for heavy, carb loaded pasta and is really easy to make. Filling our insides with hydrating, nutrient-rich veggies that will keep you glowing and full of energy. Investing in a good spiralizer might be a good idea for this recipe and for many recipes to come, this is one I like that will give you beautiful spiralled veggies!
Zucchini
Did you know zucchini is a fruit? We imagine fruit being sweet and juicy but this fruit is slightly different. Zucchini is a great ingredient to use in dishes like these as zucchini have little taste and soak up all flavours while retaining their crunch. Zucchini being extremely hydrating—due to its high water content and fiber, and low in calories—gives you the feeling of being full, without the bloat.

This is another veggie that has very little fat content and full of fibre. Claimed to be the perfect health food carrots lower cholesterol, aid weight loss, Improve eye health and reduce the risk of cancer.

- Potassium – important for the control of blood pressure.
- Beta carotine giving the carrot it’s bright orange colour , an antioxidant that is converted to vitamin A in the body. The absorption is better (up to 6.5-fold) if the carrots are cooked.

- Vitamin A promotes good vision, and is important for growth, development, and immune function.
- Biotin One of the B-vitamins, formerly known as vitamin H. It plays an important role in fat and protein metabolism.

Fresh Zucchini, Carrot Zoodletti Recipe
Ingredients
- 1 courgette
- 3 Carrots
- 2 Spring Onion
- 1 tbs maple syrup
- handful of sprouts
- 1 tbsp dijon mustard
- 1 tablespoon Apple Cider Vinegar
- Juice from 1 lime
- 1 tabs of flaxseed oil
- 1 tbsp sesame seeds
- 1/2 tsp chilli flakes
Directions
- Spiralize the carrots and courgette and place in to a saucepan with a bit of spring water and cook them for around 5 minutes.
- While that’s cooking, place all of the remainder, apart from the sprouts, of the ingredients into a blender and blend until all mixed.
- Once “spaghetti” is ready place into a bowl and pour the dressing from the blender over and mix well.
- Top with the fresh sprouts and enjoy!
