Consuming calories warms the body up, as essentially you are adding energy to your system. Cold weather makes your body temperature drop, which is why you could feel an urge to eat more. So we must listen to these cravings as there are actually reasons for them! Pumpkin is one of the many winter squash’s that are around at this time of year. Pumpkin in particular is a great choice for making hearty, warming and most importantly healthy desserts as well as stews and roasts. Did you know pumpkin is actually a fruit but is more nutritionally similar to a vegetable.

  • Weight Loss -Keeps you feeling fuller for longer! Rich in fibre which slows digestion and being mostly made up of water means that it’s low in calories
  • Youthful Skin – Pumpkin is full of beta-carotene which has shown to block harmful UV rays, a natural sunblock! The vitamin C also produces collagen  keeping your skin healthy and plump. Vitamin A & E also present are essentials for your skin.
  • Improves Eyesight – The high amount of antioxidants in this squash could prevent degenerative damage to the eyes.
  • Heart Health – Pumpkin is high in potassium which lowers blood pressure and reduces the risks of stroke – the two risk factors of heart disease. It’s also rich in vitamin C, fibre and antioxidants, which have been linked to heart health benefits.
  • Controls Diabetes –  The pumpkin seeds and pulp in particular are excellent for helping the absorption of glucose into the tissues and intestines, as well as balancing levels of liver glucose.
  • Strengthens Immunity – The vitamin C and beta-carotene content in pumpkin combined boosts immunity. Beta-carotene is converted into vitamin A. This triggers the creation of white blood cells that fight infection.

Raw Pumkin Maple Granola Recipe

Ingredients

Dry Ingredients

  • Buckwheat oats
  • 1/2 seeds (chia, flaxseeds, pumpkin, sunflower)
  • handful of mulberries
  • 1/2 cup of mixed chopped pecans and almonds
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon himalayan salt

Raw Pumkin Maple Granola Recipe

Wet Ingredients

  • 1/4 cup maple syrup
  • 1/3 cup coconut oil
  • 1/4 cup pumpkin puree

Directions

  1. Turn on the oven to 100 and let it heat up. You want to keep on a low temperature as you don’t want to kill all of the nutrients in the ingredients you are using.
  2. In a large mixing bowl put all of the dry ingredients in and mix.
  3. Place all of the wet ingredients in a pan and on low heat, slowly melt the ingredients until you get a moth consistency.
  4. Pour the wet ingredients into the mixing bowl with the dry ingredients and mix well until all of the ingredients are combined.
  5. Line a try with baking paper and spread the mixture across it. Put it in the over for 20-30 minutes. If you have the oven on a higher setting it will bake a lot quicker.
  6. Once ready, remove from the tray from the oven and let sit until cools. To store, keep in a dry glass, sealed, container so that your granola doesn’t loose it’s crunch!
  7. Enjoy with any plant milk, nut butters and seasonal fruits!
